Terroir: 25-year-old vines cultivated on calcareous and Kimmeridgiandark marl with layers of fossilized seashell-soils.
Winemaking: With soil work according to the lunar cycle and biodynamics, the wines are hand harvested and gently pressed with spontaneous fermentation with native yeast in steel tanks. 6-8 months on the lees with occasional batonnage and minimal use of sulfites.

Without question, Sancerre is the most prestigious region for this grape due to the soil, climate, and history of the region. Naturally high in pyrazines, Sauvignon Blanc tends to exhibit herbaceous and green notes ranging from fresh cut grass to jalapenos and gooseberry. High in natural acidity the tart citrus fruits are also a major component to the wines flavor, especially when the grapes are grown in a cool climate like Sancerre.
