COMPOSITION: 76% Cabernet Sauvignon, 10% Petit Verdot, 10% Malbec, 4% Merlot
WINEMAKING NOTES: Sourced from 3 different vineyards within Happy Canyon. These lots were harvested by hand, and then hand-sorted, de-stemmed and fermented in small stainless steel tanks. The components were racked to blend after a year in small French oak barrels, and then spent another 6 months in barrel before being bottled.
TASTING NOTES: This wine displays a deep garnet color, and aromas of Asian plum, raspberry, Bing cherry and hints of wild thyme. Medium to full-bodied, tight-knit and very fine in the mouth, with broad, polished tannins and bright notes. This is classically structured Cabernet Sauvignon that drinks well now, but will continue to positively evolve for the next decade.
